Deep Joy Banoffee Pie

Bananas contain tryptophan, an amino acid that helps promote serotonin the feel-good brain chemical. Both bananas and dates are great sources of potassium. It is believed that stress can cause potassium levels to drop so topping them up can stave off low moods and depression.

Ingredients

  • 100g banana, sliced
  • 3 digestive biscuits
  • 100g Quark fat free soft cheese
  • 80g dates
  • 1 tsp. honey
  • 1/2 tsp. vanilla extract
  • Pinch salt
  • Squeeze of lemon juice

Method

  1. Boil the kettle. Place the dates into a small bowl and then cover them with 100ml boiling water. Leave to soak whilst you prepare the rest of the dish.

  2. Take the 3 digestive biscuits and crush them. Sprinkle them into the base of 4 small ramekin dishes.

  3. Add the honey and vanilla extract to the quark and mix well.

  4. Peel and slice your banana.

  5. Add the dates and water with a pinch of salt and a squeeze of lemon juice to a blender and blend into a smooth toffee sauce.

  6. Place a spoonful of toffee sauce on to your digestive bases. Smooth over with a wet spoon. Add 4-5 slices of banana on top followed by a spoonful of the quark mixture.
