April – Greek lamb burgers with tzatziki and tomato salad

Ingredients

  • Burgers
  • 400g lean minced lamb 20% fat
  • 1 tsp. ground cumin, coriander and smoked paprika
  • 1 tsp. garlic granules (optional)
  • 1 egg
  • 100g feta cheese, crumbled
  • Tzatziki
  • 120g Greek yoghurt
  • Small bunch mint (reserve some for the salad)
  • ¼ of a cucumber
  • 4 wholemeal bread rolls approx. 60g each
  • Salad
  • 4 large tomatoes, approx. 340g
  • Mint leaves
  • ½ red onion sliced
  • 50g black olives
  • 80g watercress
  • ½ tbsp. olive oil
  • ½ lemon juice

Method

  1. Preheat the oven to 200C.

  2. In a small bowl add the minced lamb, spices, feta and egg. Season well and mix until well combined. 

  3. Shape into 4 even sized burgers and place on a lined baking sheet.

  4. Place in the oven for 25 minutes until cooked all the way through.

  5. For the tzatziki, chop the mint and grate the cucumber. Squeeze out some of the water from the cucumber and add to the yoghurt with the mint and stir well.

  6. Slice the tomatoes and place in a bowl, add the olives, reserved mint leaves, watercress and red onion. Mix well and drizzle with olive oil and lemon juice. Season to taste.

  7. Serve the burgers in the buns with the tzatziki and tomato salad on the side.
