Pick Me Up Paella

Brown rice is a complex carbohydrate that is believed to promote the production of serotonin a feel-good brain chemical. Seafood is packed full of omega 3 along with iron, calcium and zinc which are all believed to help improve mood and combat stress and depression.

Ingredients

  • 1 clove garlic, chopped
  • 1 tbsp. olive oil
  • 1/8-1/4 tsp. of cayenne pepper
  • 1 tsp. smoked paprika
  • ½ chicken stock cube
  • 1 onion (approx. 80g), finely sliced
  • 1 medium red pepper (approx. 160g) chopped into cubes
  • 150g frozen peas
  • 1 x 250g bag of wholemeal basmati rice (e.g. Tilda steamed brown basmati rice)
  • 1 x 250g pack of fresh seafood selection (prawn, mussels, squid)
  • 90g diced chorizo
  • 1 x 400g tin tomatoes
  • Lemon wedges
  • 1 x 15g bunch of parsley (optional)

Method

  1. Heat the olive oil in a pan and add the garlic, cayenne pepper, smoked paprika, onion and red pepper. Sweat gently on a low heat for 5 minutes with the lid on until the vegetables start to soften. Then add tomatoes, the ½ chicken stock cube and simmer gently for 20 minutes with the lid on.

  2. Cook the rice according to the instructions on the packet. Now add the frozen peas and cook for a minute or 2 until they are cooked through, followed by the rice and the chorizo.

  3. Now add the seafood mix and cook for another 2 minutes until piping hot.

  4. Serve with lemon wedges and some chopped parsley.
