Trout with sweet potato wedges & veg

Tasty trout with sweet potato wedgies.

Ingredients

  • 160g (fist sized) sweet potato cut into
  • wedges
  • 1 tbsp olive oil
  • 1 trout fillet (140g)
  • Lemon wedge to serve

Method

  1. Place sweet potato wedges into a baking tray and drizzle with oil. Bake at 180 degrees for 30-40 mins.

  2. Place trout in foil, season with salt and pepper as desired and place wedge of lemon on top. Wrap up to form a parcel.

  3. 15 mins before end of potato cooking time put parcel in the oven. Then steam the veg. Serve altogether.
