Mackerel & Egg Potato Salad

This delicious fish dish is quick to make and healthy too.

Ingredients

  • 200g new potatoes
  • 2 handfuls mixed salad leaves
  • 40g asparagus tips (blanched)
  • 4 cherry tomatoes
  • 1 egg hard boiled and sliced
  • 75g smoked mackerel
  • Dressing:
  • ¼ lemon juice only
  • 1 clove of garlic finely chopped
  • 1 tbs crème fraiche
  • 1tsp horseradish sauce

Method

  1. Cook the potatoes and hard boil the egg.

  2. Place the salad leaves and asparagus on a plate. Top with the tomatoes, mackerel, egg and potatoes.

  3. Whisk the dressing and drizzle over the salad.
