Keto Ready Lasagne

This is layered with courgette slices instead of pasta to make a delicious keto-friendly lasagne.


  • Drizzle of olive oil (1 tsp)
  • 500g ground beef (minced beef – standard)
  • Pinch salt and freshly ground black pepper
  • 115g marinara sauce or tomato sauce
  • 1 large courgette, finely sliced in lengths using a T-peeler (squeezed to remove excess water)
  • 250g pot ricotta cheese
  • 125g mozzarella cheese, finely sliced
  • Oven proof dish, about 9 inch x 9 inch

  1. Preheat oven to 200C /gas 6 (180C fan oven).

  2. Heat the oil in a large frying pan, add the ground beef, season with salt and freshly ground black pepper and cook until no longer pink.

  3. Stir in the marinara sauce, allow it to bubble, then reduce to a simmer and cook for about 1 hour, topping up with a little hot water if it starts to dry out too much.

  4. Now layer the meat in the dish, with the courgette strips, ricotta and mozzarella, ending with a topping of mozzarella.

  5. Cover with foil, put it the oven for 30 minutes, removing the foil for the last 10 minutes for it to brown.
