Keto Ready Herby Muffins

Savoury muffins make the perfect snack or lunch – easy to make with coconut flour and almond flour, resulting in a light and airy bake!

Ingredients

  • 80g coconut flour
  • 2 tbsp almond flour (25g)
  • 2 tsp cream of tartar
  • 1 tsp baking powder
  • ¾ tsp salt
  • 110g cold salted butter, cubed
  • 15g fresh parsley, chopped
  • 25g spring onion, finely chopped
  • 5 eggs
  • 110ml whole milk
  • 6 hole large muffin tin, lined with paper cases

Method

  1. Preheat the oven to 200C/Gas mark 6 (180C fan oven) In a large bowl, mix together coconut flour, almond flour, cream of tartar, baking powder, and salt.

  2. Rub the cubed butter into the flour mix until crumbly, stir in parsley, spring onions and chives.

  3. In another bowl, whisk the eggs and milk, pour it over dry ingredients and beat to combine.

  4. Divide the mixture up between the muffin cases, put in the oven to bake for 20-30 minutes until golden and a skewer comes out clean when poked in the middle.
