Sausage ciabatta sandwich with sticky tomato relish
The best way to see yourself into the weekend!
500g cherry tomatoes, halved
2 sprigs of fresh thyme, chopped
2 tsp. dried oregano
2 cloves garlic peeled and chopped
12 low-fat sausages (approx. 70 kcal per sausage. For example Asda extra special light and lean pork sausages)
1 tbsp. olive oil
1 tbsp. Balsamic vinegar
½ tbsp. Honey
4 ciabatta rolls (90g each)
80 g Rocket leaves
Preheat the BBQ until the ashes turn grey.
Place the tomatoes, thyme, oregano, garlic into the bottom of a large baking try. Drizzle over the balsamic vinegar, olive oil and honey and mix well. Place on top of the BBQ and leave to cook and break down. Stir occasionally and once the tomatoes have started to break down and release the juices leave them to bubble for while and thicken (approximately 10 minutes depending on the heat of your BBQ). Leave to cool.
Place the sausages on the BBQ and cook until piping hot all the way through, turning them occasionally.
Meanwhile cook the ciabatta rolls according to the packet instructions.
When the sausages are cooked remove from BBQ. Slice your rolls in half and evenly divide up the sausages. Pour over some of the sticky tomato relish and add some rocket leaves before placing the top of the roll on.

Body Mass Index (BMI) is a calculation that uses your height and weight to determine a number that represents your risk for obesity-related health conditions such as heart disease, hypertension and diabetes. The higher your BMI is over 25, the greater the risk of developing these conditions.**
**There are some limitations to the Body Mass Index calculation, because it does not measure body composition. BMI overestimates body fat in persons who are very muscular and it can underestimate body fat in persons who have lost muscle mass (e.g., many elderly). People with more muscular builds may be classified as overweight according to BMI numbers even if they have a very healthy body fat percentage. A high BMI from increased muscle alone is not associated with health risks. These are the recommended classifications for BMI, adopted by the Expert Panel on the Identification, Evaluation, and Treatment of Overweight & Obesity in Adults, and endorsed by leading organizations of health professionals.
