Banana Pancakes with Chia Seed Jam

Everyone needs a go-to pancake recipe. We have this one covered and, even better, this recipe is nutritious too. Go on - stack them up and enjoy!

Ingredients

  • 150g wholemeal self-raising flour
  • 1 tbsp. baking powder
  • Pinch of salt
  • 100g overripe banana
  • 8 tbsp. semi-skimmed milk
  • 1 tbsp. vegetable oil
  • 2 eggs
  • 1 tbsp. vanilla extract or essence (optional)
  • 8 sprays of sunflower oil
  • 160g frozen mixed berries
  • 4 tbsp. water
  • 20g chia seeds (optional)
  • 2 tbsp. maple syrup
  • 240g Greek yogurt (full-fat)

Method

  1. In a bowl, mix the flour, baking powder and a pinch of salt.

  2. In a food processor, add the banana, milk, vegetable oil, eggs and vanilla extract or essence (if using), Whizz for a few seconds until smooth. 

  3. Add the dry ingredients to the wet ingredients, Whizz into a smooth batter. 

  4. Take a non-stock fryingg pan and add a few sprays of sunflower oil. Heat the pan to a medium heat and then add small dollops of pancake mixture to the pan. Wait for bubbles to apear and then flip the pancakes over. Cook well on the other side. 

  5. To make the chia seed jam, add the frozen berries, 4 tbsp. water, chia seeds and the maple syrup to a small pan. Heat gentley over a low heat for approx. 5 minutes until the berries have broken down and the seeds have been absorbed into the jam. Serve with the pancakes and yogurt.
