Primavera Pizza

The wholemeal flour in this recipe gives you a boost in fibre.

Ingredients

  • 80g strong white flour
  • 80g strong brown flour
  • 1 tsp. (7g) fast acting yeast
  • 100-120ml warm water
  • Pinch of salt
  • 1 tin of chopped tomatoes
  • 2 tbsp. tomato puree
  • 1 tsp. dried oregano
  • 70g frozen peas, cooked and drained
  • 125g asparagus spears, ends chopped off and halved lengthways
  • 80g courgette, sliced thinly
  • 125g light mozzarella cheese
  • 45g extra mature cheddar grated

Method

  1. Preheat the oven to 220C.

  2. Mix the flours, yeast and a pinch of salt in a bowl. Pour in the warm water and mix to a soft dough. Knead for 5 mins. Then cut in half and roll out into two pizza bases approximately 25cm diameter. Place onto baking sheets covered in oiled baking paper and set aside for 20 minutes.

  3. Meanwhile in bowl mix the chopped tomatoes, tomato puree and oregano.

  4. When you are ready to assemble your pizza add some of the tomato sauce to the bases. Sprinkle with the vegetables and top with cheese.

  5. Cook for 15-20 minutes or until golden
