Summer Favourites Summer is here! Put your sunnies on to try some of our favourite summer dishes al fresco style,

If you're having friends over or heading to a party try mixing these up. One pork kebab, one lettuce cup, a bit of Mexican salad. Just remember to count your calories. We have plenty more recipes for you to try. Check them out  here!

These meals are part of the SlimFast 3.2.1 Plan and are calorie controlled. The SlimFast 3.2.1 Plan consists of three 100kcal snacks a day, two meal replacements and a balanced 600kcal evening meal (800 for men).

Spiced Minced Pork Lettuce cups (583kcal)
Serves 2

Ingredients
  • Small piece fresh ginger, grated
  • 2 cloves of garlic, minced
  • ½- 1 red chillies, sliced
  • 1 tbsp. toasted sesame seed oil
  • 1 small red onion (approximately 120g)
  • 500g minced pork, 5% fat
  • 2 red peppers, chopped into small cubes (approximately 160g each)
  • 2 carrots, peeled and chopped into small cubes (approximately 120g each)
  • 1 tbsp. honey
  • 1 tbsp. fish sauce
  • 2 tbsp. soya sauce
  • 1 tbsp. lime juice
  • 1 little gem lettuce
  • Handful of mint and coriander
  • 2 spring onions, sliced
  • 25g salted peanuts

Method
  1. Place a non-stick frying pan on to a medium heat. Add the sesame seed oil, garlic, ginger, chilli and red onion and gently fry for 3-4 minutes.
  2. Add the pork, peppers and carrots. Break down the pork with a wooden spoon and then place a lid on the pan and leave the vegetables to sweat for 5-10 minutes until soft.
  3. Now add the honey, fish sauce, soya sauce and lime juice and mix well. Cook for a further 2-3 minutes until the mince is cooked through, the vegetables are soft and the sauce has reduced.
  4. Wash the lettuce and chop off the ends and separate out the leaves into 4 cups.
  5. Finally stir the peanuts, mint and coriander into the pork mixture. Fill each lettuce leaf with a spoon of mince and sprinkle with spring onions.

Pork Kebabs (560kcal)
Serves 4



Ingredients
  • 500g lean pork, cut into cubes
  • 100ml low fat natural yogurt
  • 50ml Light mayonnaise
  • 1 dessertspoon garam masala
  • Zest and juice of 1 lemon
  • 1 yellow or orange pepper, diced
  • 1 onion cut into wedges
  • 1 courgette sliced
  • Lime wedges and coriander leaves to garnish
  • 350g (dried weight) brown rice
  • For men, add a large portion mixed fruit salad (250g) (188 kcal)

Method
  1. Cook the rice according to the pack instructions.
  2. Mix together the yogurt, mayonnaise, garam masala and zest and juice of lemon in a bowl. Stir in the meat and leave to marinate for 10–15 minutes.
  3. Thread the meat, peppers, onion and courgette onto skewers and cook on the barbecue or under a hot grill for 5–6 minutes on each side or until cooked through.
  4. Serve with lime wedges, coriander, salad and rice.
