How is it almost Spring already? It certainly has crêped up on us 😉 Try mixing up your pancakes this Shrove Tuesday by using your SlimFast shake powder instead of flour and enjoy as one of your two daily meal replacements on the 3.2.1. Plan. Easy, do-able and delicious.

Ingredients: 

  • 5 scoops of any of our SlimFast core powders
  • 5 egg whites
  • 6-7 tablespoons skimmed milk
  • 2 sweeteners 
  • 1kcal spray 
Serves: 2 people
Calories per serving: 234 

Method: 
  1. Put vanilla powder (or any other flavour) and sweetener into a large mixing bowl and make a well in the centre
  2. Crack the eggs and carefully drop the whites into the middle. Pour in 2 tablespoons of milk and start whisking from the centre, gradually drawing in the powder, the eggs and the milk.
  3. Once all of the powder is incorporated, beat until you have a smooth, thick paste. Add the rest of the milk and stir in.
  4. Heat the non-stick pan over a moderate heat, and spray on a couple of squirts of the 1kcal spray. Ladle some batter into the pan, tilting it to move the mixture around for a thin and even layer.
  5. Return the pan to the heat, then leave to cook, undisturbed, for about 30 seconds. If the pan is the right temperature, the pancake should turn golden underneath after about 30 seconds and will be ready to turn.
  6. Cook on second side and serve!
Note: to have as a meal replacement in place of either a SlimFast meal replacement shake or bar.
