Keto Ready Sweet potato toast

A super easy snack or light lunch and a great alternative to traditional toast.

Ingredients

  • ¼ inch slice of sweet potato (60g)
  • 1 slice mozzarella (30g)
  • 2 cherry tomatoes, halved
  • 10g wild rocket leaves
  • 1 tbsp balsamic glaze

Method

  1. Heat the griddle pan or grill to hot, add the sweet potato slice and cook for about 3-4 minutes on each side until tender but not too soft.

  2. Top potato slice with mozzarella, cherry tomatoes and rocket then drizzle over balsamic glaze. Dig in and enjoy!
