Sizzling Sausage, Full on Beans and Sweet Potato Bake

This meal is rich in complex carbohydrates, which are believed to promote the production of serotonin, the feel-good brain chemical. Beans are a great source of iron which helps the transportation of oxygen in our bodies to keep us feeling energised.

Ingredients

  • 534g sausages (e.g. 8 x Asda Extra Special Pork Sausages)
  • 250g carrots peeled and chopped into small cubes
  • 650g sweet potatoes, peeled and sliced into small 1 cm cubes
  • 1 small red onion (approx. 60g), finely sliced
  • 1 x 400g tin cannellini bean drained
  • 500ml chicken stock – boiling hot
  • 1 x 10g bunch thyme
  • 1 tbsp. honey
  • 2 tsp. Dijon mustard

Method

  1. Preheat the oven to 220C (200C fan).

  2. Arrange the sweet potatoes, carrots, red onion and thyme in a large roasting tin with the sausages on top. Prick the sausages with a fork.

  3. Make up the stock with boiling water and whisk in the mustard and honey. Pour over the sausages and vegetables.

  4. Place in the oven for 35 minutes and cook until the sausages are cooked through. Stir in the beans 5 minutes before the end of the cooking time.

  5. To serve chop the sausages into bite sized pieces and stir through the vegetables and beans. Garnish with some extra thyme leaves.
