Avocado Whip

A really simple prep ahead dessert, made in one step with just 5 ingredients!

Ingredients

  • 400 ml coconut milk
  • 1 tbsp lime juice
  • 1 tbsp stevia
  • 1 tsp pure vanilla extract
  • 2 medium avocados, halved, and flesh removed (280g)
  • 3 tbsp pomegranate seeds for topping (50g)

Method

  1. Add all ingredients except the pomegranate seeds to a blender or food processor and blend until smooth and velvety.

  2. Pour the mixture into serving dishes, and put in the fridge to chill for an hour before serving. Scatter with Pomegranate seeds to serve.
