Keto Ready Chicken and Spinach Salad

This sumptuous salad is bursting with flavour; perfect for a hearty lunch or dinner.

Ingredients

  • 255g spinach leaves
  • 90g black olives, sliced
  • 525g ready cooked grilled or baked chicken breast, sliced (without skin)
  • 110g flaked almonds
  • 100g cherry tomatoes, halved
  • 3 medium hard-boiled eggs, quartered
  • For the dressing
  • 3 tsp balsamic vinegar
  • 3 tbsp mayonnaise (66g)
  • 5 tsp lemon juice
  • 2 tsp olive oil
  • Salt and freshly ground black pepper

Method

  1. First make the dressing. Add the ingredients to a small bowl and whisk, taste and adjust seasoning. Put to one side.

  2. Add spinach to a mixing bowl, then top with olives, tomatoes, prepared  chicken breast slices, almonds, and hard-boiled egg and gently tumble together.

  3. Drizzle over dressing and toss gently, transfer to a serving bowl.
