Sunny Sardines on Toast

Sardines are a great source of omega 3 which is linked to boosting mood and concentration

Ingredients

  • 1 x 120g tin sardines (in brine), drained
  • 50g light cream cheese (e.g. Philadelphia Light)
  • Juice of half a lemon
  • 4 medium slices whole meal bread (approx. 37g each)
  • 10g butter
  • 1 x 15g bunch chopped flat leaf parsley

Method

  1. Open the sardines and drain.

  2. Add to a food processor with the cream cheese, lemon juice, salt and pepper.

  3. Blend to your preferred consistency (or mash well with a fork).

  4. Place in a container in the fridge and leave for at least 30 minutes to firm up.

  5. Place bread in the toaster.

  6. Butter the toast and then spread with the pate. Garnish with chopped parsley.
