Happy n Hearty Italian Beef Stew & Golden Baby Roasties

Potatoes are a source of carbohydrates, which are believed to promote the production of serotonin, the feel-good brain chemical. Beef is a great source of zinc, which is believed to support a healthy immune system and keep depression at bay.

Ingredients

  • 250g beef steak, fat removed and cut into strips
  • 2 tbsp. olive oil
  • 2 red/ yellow peppers (approx. 160g each), chopped
  • 1 red onion (approx. 120g), finely chopped
  • 1 clove garlic, chopped
  • Sprig of rosemary, finely chopped
  • 1 x 400g tin of tomatoes
  • 80g black olives, pitted
  • 350g new potatoes, skins on and quartered
  • 15g basil to garnish (optional)

Method

  1. Preheat the oven to 230C (210C fan). Chop the new potatoes into quarters and mix well with 1 tbsp. olive oil, salt and pepper. Place in the oven for 20-25 minutes until cooked through.

  2. Heat 1/2 tbsp. olive oil in a pan and add the onion, rosemary, garlic and peppers. Put a lid on and sweat for 5 minutes until starting to soften. Add the tinned tomatoes, rinse the tin out with 100mls of water and add, bring to the boil. Turn down the heat and simmer with a lid on for a further 20 minutes until the vegetables are cooked.

  3. Mix your steak strips with ½ tbps. olive oil and season with salt and pepper. Heat a non stick frying pan and fry the steak to your liking.  Add the cooked steak along with the olives to the tomato sauce and stir through.

  4. Serve stew with the new potatoes. Garnish with basil.
