Sausage ciabatta sandwich with sticky tomato relish

Ingredients

  • 500g cherry tomatoes, halved
  • 2 sprigs of fresh thyme, chopped
  • 2 tsp. dried oregano
  • 2 cloves garlic peeled and chopped
  • 12 low-fat sausages (approx. 70 kcal per sausage. For example Asda extra special light and lean pork sausages)
  • 1 tbsp. olive oil
  • 1 tbsp. Balsamic vinegar
  • ½ tbsp. Honey
  • 4 ciabatta rolls (90g each)
  • 80 g Rocket leaves

Method

  1. Preheat the BBQ until the ashes turn grey.

  2. Place the tomatoes, thyme, oregano, garlic into the bottom of a large baking try. Drizzle over the balsamic vinegar, olive oil and honey and mix well. Place on top of the BBQ and leave to cook and break down. Stir occasionally and once the tomatoes have started to break down and release the juices leave them to bubble for while and thicken (approximately 10 minutes depending on the heat of your BBQ). Leave to cool.  

  3. Place the sausages on the BBQ and cook until piping hot all the way through, turning them occasionally.

  4. Meanwhile cook the ciabatta rolls according to the packet instructions.

  5. When the sausages are cooked remove from BBQ. Slice your rolls in half and evenly divide up the sausages. Pour over some of the sticky tomato relish and add some rocket leaves before placing the top of the roll on.
