Chilli Pork Cash

Ingredients

  • 2 tablespoons vegetable fat spread
  • 1 garlic clove, crushed
  • 350g (12oz) lean pork, cut into strips
  • 55g (2oz) baby sweetcorn
  • 2 small courgettes cut into matchsticks
  • 1 red pepper, seeds removed and cut into strips
  • 1 carrot, cut into matchsticks
  • 55g (2oz) cashew nuts
  • A little salt and black pepper
  • 1 tablespoon mild chilli sauce
  • 250g (9oz) cooked rice, to serve

Instructions

Melt the spread in a wok or large frying pan, add the garlic and cook, stirring, until soft.

Add the pork and stir-fry over a moderately high heat until no longer pink. Add the vegetables and stir -ry for about 5 minutes until just cooked.

Add remaining ingredients and heat through.

Serve with rice.
